Sweetened Homemade Plantain Chips (Kpekere)

Plantain Chips SnacksGreen plantains are not the best in taste when eaten on its own and that is probably why a lot of people look away from it or term it food for only diabetics. Green or unripe plantain is nutritious and there are a lot of ways that it can be made to make it more appealing, for example, the plantain muffin for diabetics makes it a good breakfast idea. You can mix it with the ripe plantain when making pottage to give it a sweeter taste especially for kids.

Plantain chips is another good way to use your green plantain and it is a snack that is enjoyed by kids and adults alike. Plantain chips are sold everywhere but i believe making it at home is a lot healthier. Commercial varieties are not always fresh and you may not know how long the oil used in frying them have lasted, making it more saturated and unhealthy for consumption.

Plantain chips especially homemade is a better snack to put in your child’s lunchbox than crisps, biscuits, puff-puff and other junk snacks. This recipe is sweetened homemade plantain chips because it has the added sweetness of dates powder to it. They’re really easy to make too, especially if you have the Best Deep Fryer.

Ingredients:

  • Fresh green unripe plantain
  • Dates powder
  • Salt to taste
  • Water
  • Oil for deep frying

Method:

  1. Peel the back of the plantain off, then slice plantain thinly in circles or stripes with a sharp knife or potato peeler.
  2. Put in water for about 5 minutes, then drain in a sieve and transfer to a bowl.
  3. Sprinkle dates powder and salt, toss well to combine.
  4. Fry in batches in hot oil until golden brown and crispy. Scoop out to drain.
  5. Sprinkle some more dates powder, toss and serve.
