Plantain and Beans Pancake (Dodo-Akara Pancake)

plantain and beans pancakeBeans flour is normally made by grinding dry beans or dried peeled beans into flour. It makes a good meal for babies, especially when you make it and mix it with other meals to make a pureed baby food or a chunky baby mash. Making pancake with beans flour is really another good way to get the kids eat beans. It is local to us and easily available…what more, you can make your own flour.

The addition of very ripe or overripe plantain to make this pancake adds a sweetness to it that makes it more enjoyable without the addition of sugar. It is a perfect addition to the lunchbox as much as a delicious breakfast for the whole family. It is equally a good finger food to give to your toddler.

Plantain and Beans Pancake (Dodo -Akara Pancake)

Ingredients

  • 1 ripe or overripe plantain
  • 3-4 tablespoons beans flour (dry ground beans)
  • 1 egg
  • ¼-½ cup water or milk
  • Dry ground pepper & pinch of salt to taste
  • 1 tablespoon of vegetable oil + more for frying

Method

    1. Peel plantain and cut into a bowl. Mash well with a masher or your fork. Alternatively, you can use a blender to blend to a puree if you don’t want to see any bits.
    2. Beat the egg with pepper and a pinch of salt, mix into the plantain.
    3. Add the beans flour and mix well. Add the vegetable oil and some water, then combine well to get a smooth batter.
    4. Heat a little oil in a pan on low-medium heat. Scoop the batter in and allow to cook for about 2 minutes, flip and cook the other side until done.
    5. Serve warm alone or with pap.
Tip: Instead of pancakes, make waffles with your waffle maker. Just add more beans flour to make your batter  a bit thicker.
